Species: Capsicum annuum

Size: Generally 2 to 5 inches long, 1/2 to 1 inch wide

Shape: Conical, cylindrical, pendant, taper to a rounded end

Color: Dull tan to brown

Scoville Scale: 5,000 to 10,000

Also Known As: Acorchado, bola, candelaria, gorda, jarocho, morita

Grown In: Veracruz, Oaxaca, and Chihuahua, Mexico; Texas, New Mexico

Commonly Used In: Soups, salsas, hot sauces

Pepper Facts: The chipotle is simply a dried, smoked jalapeno. It is characterized by its sweet, smoky flavor. Roughly 1/5 of Mexico's jalapeno crop is made into chipotles.
